Kantha Shelke, Ph.D., CFS, works at the intersection of food science and applications, food safety and regulations, new product development, education and consumer understanding. She is a Principal at Corvus Blue, a food science and research firm expediting development and commercialization of honestly healthful products and technologies. She held senior positions at ACNielsen, Ben & Jerry’s, Continental Baking, and Grand Metropolitan Food Sector and concurrently held faculty positions at universities including Kansas State University, and University of Vermont, before launching Corvus Blue in 2000. Kantha is a Contributing Editor for Prepared Foods magazine, the Science & Technology Editor for PLMA Live! video magazine., and serves as adjunct faculty in Johns Hopkins University’s Master of Science in Food Safety Regulation program (Baltimore, MD), and visiting professor at the Department of Food Science and Nutrition, at Management Center Innsbruck (MCI), Austria.
